
It’s literally crazy how satisfying I find a meal like this. For me, the simpler the ingredients (meaning whole plant foods) and easier a recipe is to make, the easier it is to digest. And, I’ve said it once, so you know I’ll keep saying it: I <3 carbs! I’m living proof that you don’t need to be scared of them! If you want to learn more, The China Study is really eye opening.
Ingredients:
- Jasmine rice
- Mushrooms
- Green beans
- Red peppers
- Carrots
- Green peas
- 1 tbsp. avocado oil
- 1 tbsp. Miyoko’s Butter
- Himalayan sea salt
- Black pepper
- 1/4 cup fresh lemon juice
Process:
- Prepare rice according to package
- Chop all veggies
- Spray pan with oil so that the food doesn’t stick
- Mix veggies and rice with a little avocado oil and Miyoko’s Butter
- Add in salt, pepper, and a few squeezes of fresh lemon
- Enjoy!
